Crock Pot Love (again)

You probably know by now that our crock pot gets LOTS of use, but usually it is used for dinner so it can cook while we are away at work during the day. However, I’ve recently found two wonderful recipes that aren’t evening related but are still delicious.

1. Cinnamon Sugar Almonds – I used this recipe but altered it for more almonds, as I made these as gifts.

2 C. Sugar
2 C. Brown Sugar
5 Tbsp. Cinnamon
1/8 tsp. Salt
2 Egg White
2 tsp. vanilla
6 Cups Almonds
1/4 C. Water (I added this after they cooked for a bit)

Mix all the ingredients together and stir every twenty minutes until done.

I covered the almonds with the egg white, then mix all the ingredients together and cook on low in the crock pot, stirring every 30 minutes until done (took 4 hours for me).

Spread out to cool.

2. Bacon Spinach Quiche  – I used this recipe but used bacon instead of sausage

10 Eggs, Beaten
1 Cup Milk
2 Cups of Grated Cheddar Cheese
1/2 Tablespoon of Pepper
1/2 Tablespoon of Salt
1 cup bacon, cut up
1/2 Cup Shredded onion
1 1/2 Cups Fresh Spinach finely cut up

Mix all of the ingredients together.

Mix all of the ingredients together.

Poured the ingredients into the crock pot and turned on the timer.

Poured the ingredients into the crock pot and turned on the timer for 4:30a.m. (so the quiche would be done at 8:30 a.m.)

Ta-da! Finished Quiche ready when we woke up!

Even though I was cutting spinach and onion at midnight for the quiche, it was sure nice to have breakfast done when we woke up.
